Nope. We store our oils at a temperature-controlled warehouse and ship them directly to your door.

Our goal is to build long-term relationships with a handful of small producers from Spain, Italy, Portugal, Greece, and France. We'll taste oils after every harvest, and choose which oils to highlight each year. So while the exact oils might not be the same, you'll be able to choose oils from the producers you love best.

Your oils will stay freshest if they are kept away from sunlight, heat, and direct contact with air. A cool cupboard is preferable to keeping them on the counter near your stovetop, but for ease of use, we fill a small cruet with oil for cooking, then keep the rest in a cupboard nearby.

Although olive oil has a "Best when used by" date of two years from pressing, we recommend enjoying your oil within the first year of purchase. Once a container is opened (excluding bag-in-box, which preserves freshness by minimizing oxygen contact) your oil should stay fresh for up to one month.

- Bag-in-box is great for keeping olive oil fresh for several months, which is why we sell larger sizes in this format. If you use primarily olive oil for cooking, we suggest purchasing oils in bag-in-box.
- Smaller formats, such as tins and bottles are best if you plan to use the oil within 3-4 weeks of opening.
